Description
Birthday Barbie cake is so fun to create. Birthdays are so important, and cake holds all the spark to make your special day memorable. All you need is the best and unique cake design for your birthday. I made a Barbie birthday cake for my princess on my daughter’s seventh birthday. It took some labor, but the final product was rewarding and satisfying. My daughter was so happy to see the birthday Barbie theme party in which she felt like a queen!
Ingredients
For sponge cakes
- 6” round cake sponge
- 8” round cake sponge
For Homemade Fondant (you can use store-bought)
- 1 kg icing sugar
- 2 tablespoons water
- 2 cups marshmallows
- 3 tablespoons white chocolate
- 2 drops pink gel food color
For edible gum glue
- ½ teaspoon gum powder
- ¼ cup of first boiled then cooled water
For pink icing
- 500g icing sugar
- ½ tablespoons vanilla extract
- 1–2 drop of pink gel food coloring
- 3 medium-sized egg whites
For extra decoration (optional)
- Edible glitter
Instructions
- For Cake Icing: Sieve the icing sugar and mix it using a stand mixer at low speed, and gradually add the egg whites. When egg whites and icing sugar are combined, increase the speed of the mixer to medium. Mix for 4-5 minutes until glossy and fluffy. Add one drop of pink food coloring for baby pink icing color. Add another drop if you want the intense pink hue. Add additional frosting sugar if the texture is too thin, as egg sizes vary. Add vanilla extract drops, mix them slowly, and increase the speed to medium and then medium-high. I prefer firm icing as I can adjust the consistency later. Put the frosting in the refrigerator for thirty minutes.
- For Fondant: Microwave the marshmallows and water mixture for one minute. Take the bowl out of the microwave and stir until no lumps are left. Fold in white chocolate and combine it well for a firmer and elastic texture. When no lumps are left, and its texture is elastic and velvety, then add the pink food coloring to it. I want the baby pink color of fondant sheets, but you can control the intensity of colors according to your liking of the pink hue. Mix the marshmallow mixture with the icing sugar and mix it well. Knead the mixture on the board until it attains the dough-shaped consistency. Make ¾ fondant with pink color and ¼ fondant without the pink food coloring.
- Assemble the Cake: Cut the hole in the center of all the sponge cakes using a 2-inch cookie cutter. Cut 8″ and 6″ cakes into two using a serrated knife. This will allow space to hold the doll down in the middle of the cake layers. Using some frosting to help, place the first 8-inch round cake onto the board. Spread the pink icing on this layer and stack the other 8″ round cake sponge. Stack the remaining 6″ round cake sponge layers and put the pink icing in between. Trim the margin of these cake layers with the help of a serrated knife to attain the Barbie gown (domed shaped) and crumb coat to smoothen the outer layer of the cake. Barbie gown with the help of cake smoother and refrigerate it for 15-20 minutes.
- Insert the Doll in the Center: Carefully wrap the lower half of the Barbie doll to keep it clean and insert it into the center.
- Decorate the Cake: Take some white fondant and roll out a long strip. Cut the round fondant sheets using the cookie cutter. Roll each rounded sheet to flair fabric flowers and decorate the bottom of the gown in a wave pattern. Roll out the pink fondant and make a few folds at one side like flair fabric. Place it on the cake dome and repeat the process until it covers the entire dome-shaped doll gown. Decorate the Barbie cake top with fondant and lace decorations.
- Showing my Creativity: After I decorated this cake, I just felt the cake was too bare and needed an extra spark!! Yes, I’m extra like that! After adding my extra on-top lace using a silicone lace mold and brushed the top with edible silver glitter. Don’t you love it? It is totally optional and based on your choice. You can show creativity here by adding pearl sprinkles to the gown using edible glue. I also made a bow for the Barbie theme cake by rolling the pink fondant and turning it into a bow.
Notes
- Choose a good and sturdy pound cake recipe to make the stacking layers and carving easier. You can buy the cakes from some bakery, but I prefer the homemade sponge cake.
- Make sure that each cake used in layering is level smooth to prevent the cake from stumbling down and this will help in maintaining the balance of each layer. Use a knife to level the raised surfaces of each cake.
- Refrigerate the cake after frosting to let the frosting set and easier to craft further decoration.
- Use a Turntable if available to apply the frosting smoothly. If you don’t have a turntable don’t panic because you can also do it perfectly without it.
- Use gel food coloring to make vibrant colors and mix the coloring gradually to attain the desired color scheme that you have in mind.
