Have you tried Butter Smashburgers? Smash burgers are ground chuck smashed on a hot griddle with melted cheese topped with pickles, onions, and mustard sauce, all in a bun. You won’t find a taste like this anywhere else!
Smash burgers are a new trend that has recently gained popularity. The owner of a Smashburger restaurant accidentally discovered this technique, which involves pressing the ground beef ball on the hot grill to produce a much better burger than a regular burger.

- 1 pound Ground beef (80/20 blend)
- Unsalted butter 4 tbsp
- Salt to taste
- Pepper to taste
- 2 Burger buns
- 4 Cheese slices
- Toppings (pickles, onions, mustard sauce)
- 3 tbsp mayo
- ½ tbsp hot sauce
- 1 tbsp Worcestershire sauce
Instructions
- Prepare the Mayo Sauce: In a bowl, add three tablespoons of mayo, half a tablespoon of hot sauce, and one tablespoon of Worcestershire sauce. Mix it well.
- Prepare the Beef Patties: Add grated butter to ground beef and incorporate with a light hand. Divide the ground beef into equal portions, approximately 2 oz each. Roll into loosely packed balls. Place two meatballs on the heated iron skillet, spacing them apart. Press the balls firmly to smash them into irregular thin patties and sprinkle salt and pepper.
- Cook the Patties: Cook the patties for 2-3 minutes until the edges are crispy and browning. Flip the patties and place a slice of American cheese on each. Cook for an additional 2-3 minutes until the cheese is melted.
- Toast the Buns: Brush the buns with butter and toast them lightly.
- Assemble the Burgers: Place two patties on each bun, then add raw thin onion and pickle slices. Drizzle some mustard sauce. Now spread mayo sauce on the other bun and place it on the pickle.
- Serve: Serve the butter burgers hot and with fries/crispy chips.
Notes
- Form the beef into loose balls and place them on the hot skillet. Use a heavy spatula or burger press to smash them down immediately.
- Cold butter is necessary for adding to ground beef because the butter will add more flavor and juices when melted during cooking.
- Over Mixing butter with ground beef can make the patties hard.
- Use beef with a high fat content, ideal is 80/20 or 75/25 blend.
- Preheat a cast iron skillet until it’s very hot. A hot skillet is necessary for a good sear and crispy burger crust.
