  • 40 grams 1/3 cup sifted cocoa powder (use natural unsweetened cocoa or Dutch-processed cocoa)
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 90 grams 1/2 cup brown sugar
  • 50 grams 1/4 cup granulated sugar
  • 115 grams (or half a cup, of melted and cooled unsalted butter)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 180 milliliters 3/4 cup full-fat buttermilk
  • 110 grams about 3/4 cup chocolate chips (milk or dark, your choice)

Instructions

  1. Prepare the Cocoa Mixture: Sift 2/3 cup of cocoa powder (either natural or Dutch-processed) into a mixing bowl. Add melted unsalted butter and oil (both quarter cup) to the cocoa powder. Mix until you have a smooth, even mixture.
  2. Sweeten the Batter: Add brown and white sugar (half a cup) to the cocoa mixture. Crack in two large eggs and pour in 1 cup of milk. Add 1/2 tsp of vanilla extract and mix everything well until it forms an even batter.
  3. Add Dry Ingredients:Stir in two teaspoons of baking powder, one teaspoon of baking soda, and the same amount of salt. Gradually mix 2 cups of all-purpose flour until you achieve a smooth, thick consistency. Add chocolate chips to enhance the chocolate goodness.
  4. Prep the Loaf Dish: Grease a 1.4-litre loaf dish (approximately 8.5 x 4.5 x 2.5 inches) and place parchment paper inside.
  5. Bake to Perfection: Pour the prepared batter into the lined loaf dish. Sprinkle chocolate chips on top. Bake the chocolate bread for 45-50 minutes in a preheated oven at 350-400°F. It is ready if a toothpick inserted into the center comes out clean.
  6. Cool and Slice: Allow the choco bread to cool to room temperature. Remove it from the dish, peel off the parchment paper, and slice it into thick, delightful pieces.
