Just an almond? No, I love chocolate covered almonds, as they are so yum, Healthy, and nutritious. And the best part? Caramelized almonds swirl and dance in dark melted chocolate and cocoa powder.

- 3 tablespoons sugar
- ¼ cup water
- 200g raw whole Almonds
- 18g unsalted butter
- 180g dark chocolate
- 2 tablespoons cocoa powder (optional)
For making Green Tea White Chocolate Covered Almonds
- 50g white chocolate
- 2 tablespoons of green tea powder
Instructions
- Caramelize the Almonds: Witness the magical transformation of raw almonds into delectable caramelized ones. Heat water and sugar in a pan until it boils. When you add almonds in sugar syrup, they will turn white due to sugar crystals. Stir fry this continuously. As sugar crystals melt, almonds are coated in glossy. Once they turn glossy, turn off the heat and add butter. Melt butter with this residual heat and mix it well. Place the caramelized almonds on a paper foil or silicon mat. Keep the almonds apart so they don’t stick together. Cool it down completely.
- Melt the Dark Chocolate: Melt the dark chocolate in a double boiler or microwave. Check after every 20-second interval until it melts in the microwave.
- Dip the Almonds in Melted Chocolate: Now, it’s time for a patient and attentive process. Add 2/3 of the caramelized almonds in a bowl, add some tablespoons of melted dark chocolate, and mix it well. Continue to mix until all the chocolate hardens a bit. Add the remaining chocolate in parts like in tablespoons and follow mixing each time until it hardens. If you add a lot of chocolate at once and mix it, it takes a lot of time to harden, and the shape could look better. Add cocoa powder in the last mixing step and coat all the almonds with cocoa powder.
- Melt White Chocolate for Green Tea Almonds: To make the green tea white chocolate, we’ll follow the same method as we did with the dark chocolate. Once the white chocolate is melted, we’ll mix in one tablespoon of green tea powder. This will give the chocolate a subtle, earthy flavor of almonds.
- Green Tea Chocolate Almonds: We then combine the remaining 1/3 of caramelized almonds with this green tea white chocolate, applying the same method as I mentioned to coat the chocolate almonds. To finish, we sprinkle the remaining green tea powder on top, and our cool green tea white chocolate almonds are ready to serve.
- Oreo-coated Almonds: Here is an extra treat for you! You can also coat them in Oreo crushed cookie mixture. I’ve coated them in an Oreo cookie mixture, but I forgot to capture the procedure (although the procedure is the same). The first coating is done with white chocolate, and then I coat the almonds in an Oreo mixture. I will share the final picture with you!
Notes
- Melt the chocolate slowly, like in a double boiler, or microwave it for 30 seconds, stirring in between, until it melts completely.
- Cool the caramelized almonds before dipping them in melted chocolate. Separate the caramelized almonds to prevent them from sticking together.
- Mixing the almonds in chocolate to cover them thoroughly is an art and a turning point. Cover the almonds in chocolate intervals while continuously stirring the almonds in the chocolate.
