  3. Whisk the Custard Thoroughly: To make a smooth custard base, thoroughly mix the egg yolks and heavy cream. This will help produce a smooth texture.
  4. Season Carefully: Taste the crab mixture before adding it to the custard base. Adjust the seasoning with a pinch of salt and pepper to bring out the flavors.
  5. Check for Doneness: When you remove the custards from the oven, they should be set but still have a little jiggly centre.
  6. Chill Completely: Before putting the custards in the refrigerator, let them cool at room temperature.
  7. Caramelize the Sugar Evenly: To caramelize the sugar equally, rotate the cooking torch in a circular motion. If using a grill, oversee the custards to avoid scorching.
