Description

These coffee muffins have a deep coffee flavor with chocolate chip goodness. They’re great for gatherings, adding a touch of Sophistication and Warmth to any Occasion.


Ingredients

  • 2 cups All-purpose flour
  • ¾ cup sugar
  • 2 ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons instant coffee
  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • ¾ cup mini semi-sweet chocolate chips

Instructions

  1. Take a bowl and sift dry ingredients like flour, baking powder, sugar, cinnamon, and salt into the bowl.
  2. Take another bowl and prepare the wet ingredients. To prepare the wet ingredients, beat one egg and add milk, vanilla extract, and instant coffee. Whisk all the wet ingredients until combined. Stir in melted butter thoroughly.
  3. Add the prepared wet ingredients mixture to the dry ingredients and whisk it until it forms a smooth batter.
  4. Fold in semi-sweet chocolate chips to the batter. Take a muffin mold. Grease the mold or paper-lined. Now add the batter to each cup and fill the cup to two-thirds with the help of a scoop or spoon. Top them with some more chocolate chips.
  5. Bake for 18 to 20 minutes at 375°F, or until a toothpick inserted into the muffins comes out clean. Allow the muffins to cool for 4-5 minutes. After letting it cool then these cappuccino chocolate chip muffins are ready to enjoy with some coffee or milk.

Notes

  • Sift the flour and other dry ingredients of muffins to make the batter smooth and free of lumps.
  • It’s better to not mix the batter too much because it will make your muffins hard. 
  • Keep a good eye while baking muffins. If you want to check you can carry out a toothpick test. Insert the toothpick in the center of the muffin and if it turns clean or a little wet it means your muffins are done.
