Description
Palomino sauce is a silky, creamy, tomatoey, and herby sauce served with pasta or spaghetti that will satisfy your Italian cravings. This creamy rose-colored pasta sauce is made with tomato sauces cooked in-depth with aromatic herbs, garlic, butter, and cheese, much like a rich and Creamy Rosé sauce. This sauce is my all-time favorite pasta sauce!
This sauce coalesces quickly and is often served in Italian cuisine. You can make it at home, serve it over pasta, ravioli, or any other toast, and enjoy the fresh Italian taste. I frequently make this sauce for lazy Sunday dinner. It used to take me much longer to make it, but this
Ingredients
- ½ cup butter
- 1 large onion roughly chopped
- 3 cloves garlic roughly chopped
- 1 handful of fresh basil leaves
- 1 can tomato sauce (28oz)
- 1 can tomato puree (28oz)
- 1 can full of water
- 1 cup mascarpone cheese at room temperature
- 1 tsp Sea salt
- 1 tsp black pepper
- 1 tsp sugar
Instructions
- Melt the butter and add the chopped yellow onions and garlic on medium-low heat. Sauté until the onions are soft, stirring occasionally, about 7 to 10 minutes.
- After two minutes, add the basil leaves and continue cooking. Add the tomato sauce, tomato puree, and water and stir. Bring it to a simmer over medium flame.
- Mascarpone cheese should be added and whisked until melted. Stirring often, simmer for an additional ten minutes.
- Blend the sauce using an immersion blender to puree the mixture, or add it to a conventional blender, but proceed with care. You can only place a small amount in a traditional blender at a time and should always use caution when blending hot mixtures in your blender!) Blend until smooth.
- After tasting, season with salt, pepper, and sugar. Serve over your favorite pasta or gnocchi and freshly grated cheese or chopped parsley.
Notes
- Stir constantly to avoid burning the bottom and ensure a smooth texture.
- The consistency of palomino sauce depends on you. If you prefer it thin, try adding more water, and if you like it thick, simmer for longer until your desired consistency is achieved.
- Simmer the sauce slowly and gently to attain a deep flavor. Do not simmer the sauce on high flame; allow the flavors and aroma to spread throughout the sauce.
- Taste the palomino sauce and adjust the spice.
