What is a Teriyaki Bowl?
Teriyaki is a term used in Japanese cuisine that means “glossy grill”. Teriyaki involves the grilling of any meat like chicken, salmon, or beef and then glazing it with teriyaki sauce. Teriyaki bowl has rice (either boiled or fried), veggies (either stir-fried or baked), and teriyaki chicken. It is an easy healthy meal for busy people. In less than half an hour, you can do it. It is super delicious and one of my favorite teriyaki recipes!
Why Chicken Teriyaki Rice Bowl?
- Quick Meal Bowl. This recipe is quick and easy to make in less than 30 minutes. The simple ingredients we need for this recipe that is easily available in the pantry.
- Visually Perfect. Teriyaki chicken with rice and colorful veggies is so appealing to the eyes especially when sharing photos with your friends.
- You can Try Different Flavors. Feel free to try the teriyaki bowl with shrimp, tofu, salmon, and beef. Their cooking time will be different, but they are also delicious. You can also try different veggies like zucchini, green beans, and bell peppers.
- Single Bowl with Multiple Options. Chicken teriyaki rice bowl is all in one bowl. You will get protein from chicken and carbs from rice with healthy veggies like broccoli and carrots. All these make this bowl a balanced meal bowl you could wish for!
How to Prepare Veggies?
I like to use broccoli, carrots, and bell peppers but if you like you can use other vegetables as well. Three ways are more suitable to prepare veggies. The first one is to stir fry, the second one is to roast the veggies, and the third one is to steam the vegetables. I am using the stir fry technique to prepare the veggies I like. Heat two tablespoons of any cooking oil in a pan, add in your sliced veggies with a pinch of salt and cook until you are satisfied with the vegetables. I like my veggies until they have absorbed all the flavors and are slightly soft.
Things you will need for the Teriyaki Bowl
- Chicken fillets__ I am using skinless, boneless breast fillets. You can use chicken thighs with skin as it depends on your choice.
- Cornstarch__ Cornstarch is used to coat the chicken fillets for a crispy texture as it will thicken the teriyaki sauce. Cornstarch is the best choice, but all-purpose flour can also be used as a substitute.
- Veggies__ I have used one broccoli crown that is cut into small broccoli florets and sliced carrots. You can use frozen if you want but I prefer fresh.
- Rice__ Any type of rice will do. I am boiling my rice, but you can also make fried rice. I am using white rice. Brown rice or basmati also go well.
- Avocado oil__ I am using avocado oil for the preparation of chicken teriyaki. Canola oil or olive oil can also be used as a substitute.
- Sesame seeds__ Sesame seeds are used for topping the teriyaki bowl.
- Teriyaki sauce__ For teriyaki sauce preparations you will need low sodium soya, brown sugar, honey, rice vinegar, water, chopped spring onion, some slices of garlic, and ginger. Rice vinegar is easily available at any Asian store or other supermarkets but if you don’t have rice vinegar then you can use simple vinegar. If you don’t have honey, use brown sugar instead of honey and vice versa.
Instructions
Step 1. Combine the low-sodium soy sauce, rice vinegar, brown sugar, honey, water, chopped spring onion, sliced garlic, and ginger to form teriyaki sauce. Mix them until combined.
Step 2. Take the chicken breast fillets in a bowl and add some salt and cornstarch to it. Mix it with chicken until it coats nicely well.
Step 3. Add avocado oil to a pan, add your chicken fillets, and cook it on a medium flame for 5 minutes on both sides until the meat is no longer pink. Sauté the chicken for two to three minutes or until its color changes. The crispiness of the chicken is due to the cornstarch we added.
Step 4. Now it’s time to prepare chicken teriyaki glaze. Add the teriyaki sauce we prepared to the chicken and turn the heat to medium-low. Cook it until the teriyaki sauce thickens due to the cornstarch on the chicken. Cook it for about 2-3 minutes or until the sauce thickens and it becomes glossy on the chicken. Turn the flame off and the teriyaki chicken is ready.
Step 5. Stir-fried broccoli, carrots, and other veggies that you like. Boil the rice for serving in bowls.
Step 6. Assemble the chicken teriyaki bowl. Place the prepared rice in the center and arrange the teriyaki chicken and stir-fried veggies on the top. Top the chicken teriyaki with some sesame seeds and enjoy this healthy chicken teriyaki bowl.
Expert Tips
- Marinate the chicken if you are not in a hurry. Marinate for about 10-15 minutes and allow the chicken to absorb the flavors.
- The choice of chicken fillets is yours. You can use skinless chicken breasts or chicken thighs. This recipe will be delicious either way.
- I recommend you use fresh vegetables like broccoli, carrots, ginger, and garlic for this healthy chicken teriyaki rice bowl.
- This recipe’s sweetness can be changed. If you don’t like much sweetness don’t use honey and reduce sthe amounts of honey and brown sugar. I recommend you use salt carefully because the soya sauce and vinegar are already salty. Adjust the amount of salt according to your taste buds.
- You can also air fry your chicken and then cook it in the teriyaki sauce.
- Garnish with your favorite toppings like cilantro, white and black sesame seeds, or green onion.
Storage of Leftovers
Store the leftover chicken teriyaki in an airtight container and refrigerate them for 2 days. I don’t recommend freezing. Reheat In a microwave.
