I made baked vanilla ice cream sandwich, and they were terrific. I feel so blessed that my family came to visit me, and I baked for them. It’s good to end the week with something I’m very proud of after a long, hectic, and hot one.

  • Milk. 35 g of milk is needed for our cake, 80 g of evaporated milk, and 150 g of milk are required for ice-cream.
  • Vegetable oil. Take 20 g of vegetables for the cake base.
  • All-purpose flour. Take 40 g of all-purpose flour. It will give the structure and body to the cake. You can take gluten-free flour.
  • Cocoa powder. Take 10 g of cocoa powder to add to the cake base.
  • Baking powder. Take 2g baking powder, which helps raise the cake. 
  • Fresh cream. Take 200 g of fresh cream. Fresh cream adds fats and a creamy texture, which is important for creamy and smooth ice cream.

Bring the yolk mixture to a boil over low heat, stirring constantly, until thickened and large bubbles form. Pass the custard through a sieve and chill in the refrigerator.

Whip the whipped cream to 60%, then whisk the ice cream custard to soft peaks. At this point, evenly incorporate the whipped cream into the custard.
