What is Demerara Sugar?
Demerara is less or less-processed sugar, also called raw sugar. It is cane sugar that does not undergo a complete refining process, unlike white sugar. Because it has molasses, it has a unique sticky molasses flavor. It has larger granules and a light brown color. People often use it in sweets, desserts, baking, or sprinkle it over dishes for a unique caramel flavor. Due to its coarse texture, it takes longer to dissolve than regular white sugar.

Let me clear up the confusion. There are two types of cocktail syrup: simple syrup with a 1:1 sugar-to-water ratio and rich syrup with a 2:1 sugar-to-water ratio. Among rich syrups is demerara sugar syrup.
While making this syrup, always consider the water-to-demerara sugar ratio. For the perfect syrup consistency, the water should always be less than the sugar. For every cup of water, use double the amount of demerara sugar. That’s it for a perfect amber demerara syrup of the right consistency!
Ingredients

- 2 cups of demerara sugar
- 1 cup of water
How to Make Demerara Syrup
1.Adding Sugar
Heat water on medium-low heat

and add 1 cup of demerara sugar. Stir continuously until the sugar starts to dissolve

2.Adding Remaning Sugar
Once half of the sugar starts to dissolve, add the remaining half and dissolve it completely until a smooth syrup is form. It takes about 1-2 minutes.

3.Cooling & Pouring
Once all the demerara sugar dissolves, remove it from the heat and allow it to cool. Once the homemade demerara syrup is cool, pour it into a glass bottle. Mix the syrup in your cocktails and drinks and enjoy in your favorite beverages.

Expert Tips
Remove the sweet syrup from the heat and cool completely. If you continue to boil once the sugar dissolves, the sucrose will break down to glucose and fructose, making the syrup sweeter and thinner instead of the desired rich consistency.
