How to Make Barbie Cake that will surprise your princess!

Birthday Barbie cake is so fun to create. Birthdays are so important, and cake holds all the spark to make your special day memorable. All you need is the best and unique cake design for your birthday. I made a Barbie birthday cake for my princess on my daughter’s seventh birthday.  It took some labor, but the final product was rewarding and satisfying. My daughter was so happy to see the birthday Barbie theme party in which she felt like a queen!

To make this cake, you will need an actual doll for a real experience, and your princess will get an actual doll to play with. This cake is easy to make: You just need to layer the sponge cake with pink icing in between, followed by a floral Barbie dress and accessories decoration using fondant.

What Makes Barbie Cake So Special?

  • Birthday Cake of Every Girl’s Dream: Cakes featuring Barbie dolls are every girl’s ideal cake. When I made this cake for my daughter, she was so excited to see it, making her day more memorable. Anytime she saw her birthday album, her eyes sparkled like before.
  • For great Aesthetic Presentation: Barbie cakes are visually nice and charismatic. Their visuals are a stunning piece of art! The cake itself is yummy and great for photos.
  • Creative and Fun to Create: The Decoration process is itself therapy. For bakers like me, it is a language that speaks. I take a lot of time to craft the dress into minor details. I never imagined that this cake would be a creative project that is so fun to create!
  • Personalize the Decoration: You can use your imagination to create a personalized cake while decorating it. Be confident while making the barbie birthday cake, and add your ideas, imagination, and skills to make this doll cake.

Ingredients You’ll Need for a Barbie Birthday Cake?

birthday barbie ingredients
  • Sponge cakes _ To make a dome-shaped Barbie gown, you will need 6″ round cake sponges for the top layers and 8″ round cake sponges for the bottom layers. You can make this sponge cake at home using your favorite recipe or buy it from a good bakery. Make sure that the sponge cake is dense and cool before using it in the recipe.
  • Fondant _ Cake fondants are easily available at stores, but I made them at home with a few simple ingredients. I took icing sugar, some cold water (don’t use other liquid), Marshmallows (as they are for elasticity, and I’m not gonna lie, I love them), white chocolate, and pink gel food coloring.
  • Edible gum glue _ We need only two things for edible gum glue. One is gum powder, and the other, which I am using, is a quarter cup of water that is boiled and then cooled. I prefer using gum powder as it is natural, but you can also use tylose powder if you want.
  • Pink icing _ Preparing the pink icing is easy. You need basic ingredients like icing sugar, vanilla extract, pink gel food coloring (I am using the same food coloring I used in fondant because you can vary the pink shades by adding more or less gel food color), and three egg whites.

How to Create a Barbie Doll birthday Cake with Fondant

Sieve the icing sugar and mix it using a stand mixer at low speed, and gradually add the egg whites. When egg whites and icing sugar are combined, increase the speed of the mixer to medium. Mix for 4-5 minutes until glossy and fluffy. Add one drop of pink food coloring for baby pink icing color.

Add another drop if you want the intense pink hue. Add additional frosting sugar if the texture is too thin, as egg sizes vary. Add vanilla extract drops, mix them slowly, and increase the speed to medium and then medium-high. I prefer firm icing as I can adjust the consistency later. Put the frosting in the refrigerator for thirty minutes.

Microwave the marshmallows and water mixture for one minute. Take the bowl out of the microwave and stir until no lumps are left. Fold in white chocolate and combine it well for a firmer and elastic texture. When no lumps are left, and its texture is elastic and velvety, then add the pink food coloring to it. I want the baby pink color of fondant sheets, but you can control the intensity of colors according to your liking of the pink hue.

Mix the marshmallow mixture with the icing sugar and mix it well. Knead the mixture on the board until it attains the dough-shaped consistency. Make ¾ fondant with pink color and ¼ fondant without the pink food coloring.

rolling the white and pink fondant

Cut the hole in the center of all the sponge cakes using a 2-inch cookie cutter. Cut 8″ and 6″ cakes into two using a serrated knife. This will allow space to hold the doll down in the middle of the cake layers. Using some frosting to help, place the first 8-inch round cake onto the board.

Spread the pink icing on this layer and stack the other 8″ round cake sponge. Stack the remaining 6″ round cake sponge layers and put the pink icing in between. Trim the margin of these cake layers with the help of a serrated knife to attain the Barbie gown (domed shaped) and crumb coat to smoothen the outer layer of the cake. Carefully wrap the lower half of the Barbie doll to keep it clean and insert barbie in cake center.

Take some white fondant and roll out a long strip. Cut the round fondant sheets using the cookie cutter. Roll each rounded sheet to flair fabric flowers and decorate the bottom of the gown in a wave pattern. Roll out the pink fondant and make a few folds at one side like flair fabric. Place it on the cake dome and repeat the process until it covers the entire dome-shaped doll gown. Decorate the Barbie cake top with fondant and lace decorations.

After I decorated this cake, I just felt the cake was too bare and needed an extra spark!!  Yes, I’m extra like that! After adding my extra on-top lace using a silicone lace mold and brushed the top with edible silver glitter. Don’t you love it?

It is totally optional and based on your choice. You can show creativity here by adding pearl sprinkles to the gown using edible glue. I also made a bow for the Barbie theme cake by rolling the pink fondant and turning it into a bow.

Some Expert Tips to Make the Perfect Barbie Theme Birthday Cake

  • Choose a good and sturdy pound cake recipe to make stacking layers and carving easier. You can buy cakes from some bakeries, but I prefer homemade sponge cakes.
  • Ensure that each cake used in layering is level and smooth to prevent it from tumbling down. This will help maintain the balance of each layer. Use a knife to level the raised surfaces of each cake.
  • Refrigerate the cake after frosting to let the frosting set and make it easier to craft further decoration.
  • Use a Turntable, if available, to apply the frosting smoothly. If you don’t have a turntable, don’t panic; you can also do it perfectly without it.
  • Use food coloring in gel form to make bright hues, mixing the coloring gradually to attain the desired color scheme.
  • Use your dream imagination to decorate the cake to create your Barbie themed cake. My favorite edible decorations are pearls, glitter, sprinkles, Fondant flowers, and many more.
