What you will need for almond in chocolate
- Sugar and water _ Sugar and water make caramel giving the almond a glossy finish.
- Raw almonds _ Many recipes use roasted almonds, but I am using raw almonds because almonds are roasted during caramelizing.
- Unsalted butter _ A small amount of butter, coconut, or vegetable oil makes the caramel coating smooth. Unsalted butter is best for this.
- Dark Chocolate _ Dark chocolate provides the most excellent flavor to the almonds. I am using dark chocolate because it is my favorite,
- Cocoa powder _ Dutch processed cocoa is best for top coating but is optional.
- For making the green tea white chocolate version, the coating has only two ingredients: white chocolate and green tea powder. Green tea powder is healthy and gives the dish a fresh taste. We will use some green tea powder mixed with white chocolate and some to coat the top.
How to Make Chocolate Covered Almonds Recipe
1.Caramelize the Almonds
Witness the magical transformation of raw almonds into delectable caramelized ones. Heat water and sugar in a pan until it boils. When you add almonds in sugar syrup, they will turn white due to sugar crystals. Stir fry this continuously. As sugar crystals melt, almonds are coated in glossy. Once they turn glossy, turn off the heat and add butter. Melt butter with this residual heat and mix it well. Place the caramelized almonds on a paper foil or silicon mat. Keep the almonds apart so they don’t stick together. Cool it down completely.
2.Melt the Dark Chocolate
Melt the dark chocolate in a double boiler or microwave. Check after every 20-second interval until it melts in the microwave.
3.Dip the Almonds in Melted Chocolate
Now, it’s time for a patient and attentive process. Add 2/3 of the caramelized almonds in a bowl, add some tablespoons of melted dark chocolate, and mix it well. Continue to mix until all the chocolate hardens a bit. Add the remaining chocolate in parts like in tablespoons and follow mixing each time until it hardens. If you add a lot of chocolate at once and mix it, it takes a lot of time to harden, and the shape could look better. Add cocoa powder in the last mixing step and coat all the almonds with cocoa powder.
4.Melt White Chocolate for Green Tea Almonds
To make the green tea white chocolate, we’ll follow the same method as we did with the dark chocolate. Once the white chocolate is melted, we’ll mix in one tablespoon of green tea powder. This will give the chocolate a subtle, earthy flavor of almonds.
5.Green Tea Chocolate Almonds
We then combine the remaining 1/3 of caramelized almonds with this green tea white chocolate, applying the same method as I mentioned to coat the chocolate almonds. To finish, we sprinkle the remaining green tea powder on top, and our cool green tea white chocolate almonds are ready to serve.
6.Oreo-coated Almonds
Here is an extra treat for you! You can also coat them in Oreo crushed cookie mixture. I’ve coated them in an Oreo cookie mixture, but I forgot to capture the procedure (although the procedure is the same). The first coating is done with white chocolate, and then I coat the almonds in an Oreo mixture. I will share the final picture with you!
Variations you can make
- You can cover the almonds in chocolate without caramelizing them. Just melt the chocolate following the same step and dip the roasted almonds. Freeze the almonds, and they are ready.
- Add a salt pinch to the prepared almonds to contrast the sweet flavor.
- White chocolate covered almonds are also popular. Instead, melt the same amount of white chocolate by following all the recipe’s instructions.
- Add different flavors, like vanilla or honey, to melted chocolate. ½ teaspoons of vanilla and one tablespoon of honey work majestically.
- I love to experiment with different recipe styles. I also make this recipe with other nuts, such as pecans, cashews, peanuts, and walnuts. The variation with other nuts is endless, and they are also super yummy. My kids love other chocolate-covered nuts, and I make them at home.
Expert Tips
- Melt the chocolate slowly, like in a double boiler, or microwave it for 30 seconds, stirring in between, until it melts completely.
