Because it’s more than just a list of ingredients and instructions, it’s a piece of my heart, wrapped in parchment paper and tied with a cinnamon-scented bow. With simple ingredients and a touch of love, you can create a warm, moist loaf that’s perfect for breakfast, teatime, and picnic ideas!
Ingredients
Scale
- 3 medium-sized ripe bananas
- ½ cup unsalted melted butter (you can also use oil as a butter alternative)
- 1 large egg
- ½ cup powdered sugar
- Pinch of salt
- ¼ teaspoon vanilla extract
- 1 tablespoon baking soda
- ½ tablespoon cinnamon powder
- 1 ½ cups all-purpose flour
Optional:
- 2 tablespoons chocolate chips
- 2 tablespoons chopped walnuts
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf baking pan and grease it.
- Mash the Ripe Bananas: Using a fork, mash the 3 ripe bananas until smooth. If you prefer, you can use a blender for your convenience.
- Mix the Wet Ingredients: In a mixing bowl, combine the mashed bananas with the ½ cup melted butter. Whisk them together until well blended. Add the large egg and continue whisking until fully incorporated.
- Sweeten It Up: Stir in the ½ cup powdered sugar, a pinch of salt, and ¼ teaspoon vanilla extract. Mix until the sugar dissolves and the flavors meld.
- Add the Dry Ingredients: Sprinkle in the 1 tablespoon baking soda and ½ tablespoon cinnamon powder. Mix the mixture until a smooth batter is formed. Gradually add the 1 ½ cups all-purpose flour, mixing well until no white flour remains visible.
- Optional Add-Ins: For extra flavor and texture, fold in the 2 tablespoons chocolate chips and 2 tablespoons chopped walnuts (if desired).
- Pour into the Pan: Into the loaf pan that has been ready, pour the batter. Smooth the top with a spatula.
- Bake with love! Place the pan in the preheated oven and bake for approximately 55 minutes or until a toothpick inserted into the center comes out clean. The aroma will fill your kitchen!
- Cool and Slice: Remove the banana bread from the oven and let it cool in the pan for a few minutes. After that, move it to a wire rack to finish cooling. Once cooled, slice and enjoy!
Notes
- Don’t over-mash the bananas. Over-mashing the bananas results in the stiffness of banana bread.
- Use fresh bananas for a better experience. You can use frozen bananas, but I prefer to use fresh bananas.
- Don’t over-mix the ingredients for making batter because it will result in tough and dense bread. To make your bread smooth, soft, and moist, don’t over-mix.
