You can use 3 tbsp almond flour and 1 tbsp coconut flour as an alternative to All-purpose flour. 1 ½ tbsp of coconut sugar as a substitute for regular sugar. 3 tbsp of almond milk as an alternative to regular milk. Use keto brown sugar instead of normal dark brown sugar. For more keto-friendly options skip the glazing part of the recipe. 

How to make the 5-minute Cinnamon Mug Cake

Step 1. Add all-purpose flour, sugar, and baking powder in a bowl and mix them. In the same bowl add milk, vanilla extract, and vegetable oil and whisk them together until form a smooth batter.

Step 2. Melt the salted butter and stir in the dark brown sugar and ground cinnamon to produce a thick, dark brown mixture.

Step 3. Prepare the glaze by mixing the powdered sugar with milk and mixing them until a smooth consistency is attained.

Step 4. Now it’s time to assemble the mug cake. First, take the mug and pour half the batter that is prepared in the mug, then add half of the brown sugar mixture, and then add the rest of the batter. Add the rest of the brown sugar mixture and swirl it around with a skewer. We create a spiral so that the cinnamon gets to the dough.

Step 5. Microwave it for about 1 minute and 10 seconds in the microwave on the highest, that’s how long it took for me but every microwave is different so it may take longer or a bit less time for you. Keep a good eye on it and if it’s not done, microwave for an additional 10 seconds.

When I first tried these mug cakes, I also failed in the first attempt but then my kitchen helper lady told me that I might be using inaccurate measurements and overfilling the mug may fail. The exact measurement in this recipe will yield a perfect mug cake for your cravings. 

The dry mug cake is due to the low-fat content. As we are not using eggs in this mug cake, I am adding the right amount of vegetable oil to avoid my cake drying. The fat content in the mug cake should be standard to make a soft spongy mug cake.

It is mainly due to the incorrect ratio of dry and wet ingredients. Try using the exact measurement of dry and wet ingredients. The other reason that may lead to a hard mug cake is overmixing the wet and dry ingredients.  

Your mug cake may taste bitter if you are using excess baking powder. Try using the baking powder in a lesser quantity, maybe the measurement I added!
