- 1 large onion, roughly chopped
- 3 cloves garlic roughly chopped
- 1 handful of fresh basil leaves
- 1 can tomato sauce (28oz)
- 1 can tomato puree (28oz)
- 1 can full of water
- 1 cup mascarpone cheese at room temperature
- 1 tsp Sea salt
- 1 tsp black pep

l.Melt the butter and add the chopped yellow onions and garlic on medium-low heat. Sauté until the onions are soft, stirring occasionally, about 7 to 10 minutes.
2.After two minutes, add the basil leaves and continue cooking. Add the tomato sauce, tomato puree, and water and stir. Bring it to a simmer over medium flame.
3.Mascarpone cheese should be added and whisked until melted. Stirring often, simmer for an additional ten minutes.
4.Blend the sauce using an immersion blender to puree the mixture, or add it to a conventional blender, but proceed with care. You can only place a small amount in a traditional blender at a time and should always use caution when blending hot mixtures in your blender!) Blend until smooth.
5.After tasting, season with salt, pepper, and sugar. Serve over your favorite pasta or gnocchi and freshly grated cheese or chopped parsley.
